Yes. Each person opens it with their own email rather than a shared password, and that email is what the change log records. You can see who moved which enquiry, and when.
If the spreadsheet is working, keep it. This earns its place when enquiries start arriving faster than one person can copy them across, and when you want to know which page or campaign each one came from. That second part a spreadsheet cannot tell you afterwards — it is recorded at the moment the form is submitted, or not at all.
